Bread cups

Brown bread cups filled with chicken and topped with egg yolk.

Ingredients:

  • Brown sandwich bread 8 slices
  • Eggs
  • 8 Cherry tomatoes
  • 4 Chicken salami
  • 4 Chopped spring onion
  • ¼ cup Grated cheese
  • ½ cup Salt to taste Butter

Method:

  1. 20g Cut the brown bread into circles with the help of a cutter or a steel bowl.
  2. Flatten out the slices using a rolling pin.
  3. Butter one side of the slices and press inside a muffin cup.
  4. Separate the yolks and the whites taking care not to break the yolks.
  5. You will need only half the egg whites.
  6. Finely chop the salami. You could also use left over chicken or shredded chicken for this.
  7. Add the salt, pepper to the egg whites and whip well.
  8. Add the chicken and chopped spring onions.
  9. Half fill the bread cups with this mixture.
  10. Carefully slide on one egg yolk (it should not break).
  11. Top with some grated cheese and place half a cherry tomato on top.
  12. Bake in a preheated oven for 15 minutes. Serve hot.
