MINTY PEA BRUSCHETTA

An Italian starter that never fails to impress.

Preparation time: 15 mins.
Cooking time: 15 mins.
Serves: 4
 
Recipe Ingredients :

Ciabatta 8 thin slices
Frozen peas 150g, thawed
Cream cheese 4tbsp
Mint leaves a handful
Chill flakes a pinch (optional)
Olive oil to garnish
Salt to taste
 
Recipe Method:
 
Blitz the peas, cream cheese and mint in a bowl with a hand blender or in a food processor. Don’t make it too smooth- a little texture is nice. Stir through the chilli flakes and season well.
Toast the bread slices on both sides until golden. Drizzle with olive oil, then spoon a generous dollop of the pea mixture onto each ciabatta.
