Almond Meringues

The almonds in these macaroons add to the flavor while the different colors add to the eye appeal for the kids.

Preparation time: 30 mins.
Cooking time: 13 mins.
Serves: 4-5
Recipe Ingredients:

100 g   Caster sugar 
2 Egg white 
1/4 tsp. Lemon Juice
80 g   Almond powder
a pinch Salt 
1/4 tsp. Vanilla essence
Recipe Method:

Roast and powder the almonds fine with a very little sugar. Whisk egg white with lemon juice & caster sugar in a clean bowl. When the meringue is stiff, fold in the almond powder. Carefully fill the mix in piping bags. Lightly pipe small swirls on a well greased baking tray.  Allow some space between each swirl. Bake in a hot oven at 180*C for 3 minutes then reduce the temperature to 150*C and bake for 10 minutes or till pale golden in colour.
Almond cream filling
50 ml of whipping cream
50g caster sugar
½ tsp. Almond flavor
Whisk all the ingredients together. Sandwich the filling between two biscuits. You may add colors and flavors of your choice.
