AUBERGINE AND COCONUT CURRY

Recipe Ingredients :
 
Onion 1, roughly chopped
Garlic 2 cloves, peeled
Ginger a walnut- sized, roughly chopped
Green chillies 2, roughly chopped
Coriander ½ small bunch, leaves and stalks separated
Groundnut oil
Aubergine 1 large, halved and cut into wedges
Ground cumin 1 tsp
Ground coriander 1 tsp
Turmeric 1 tsp
Salt to taste
Juice of  ½ lime
Coconut milk 150ml
Flaked almonds 2 tbsp, toasted
Basmati rice 150g, cooked to serve
 
Recipe Method:
 
Whizz the first 4 Recipe Ingredients : in a processor with the coriander stalks until pureed.
Heat 2 tbsp groundnut oil in a large non-stick frying pan and fry the aubergine until golden and softening. Scoop out.
Add the puree to the pan with a little more oil and cook for 5 minutes, add the dry spices and cook for another 2 minutes. Add the tamarind and coconut milk and bring to a simmer. Add the aubergines then simmer for 10-15 minutes until tender. Season to taste. Scatter with almond and the coriander leaves and serve with rice.
