Aubergine Raita

Try this Aubergine raita and you are bound to say- It’s different!

Preparation time: 10 minutes
Cooking time: 10 minutes
Serves: 4
Recipe Ingredients:
1 medium sized Aubergine
250g yoghurt
1tsp roasted cumin powder
½ tsp salt
½ tsp chopped green chilies
Recipe Method:
Discard the top of the Aubergine. Chop the Aubergine into dices and cook with 1 cup water till soft. Drain the Aubergine and set aside to cool.
Whisk the yoghurt. Add  the salt, cumin powder, green chilies and mix well.
Add the yoghurt to the cooled aubergines  and mix well. Cool and serve.
