Barbequed Lamb Rack 1 kg Lamb rack 2 tsp Rosemary 50 ml Oil for basting 200 ml Barbeque sauce Recipe Method: Clean and wash the lamb well. Cover the bones with foil. Marinade the meat in the barbeque sauce. Place the meat onto a greased baking sheet with rosemary. Cover with foil Grill the meat in a hot oven at 175* C for an hour. Remove the covering foil. Baste the meat with oil and sauce. Cook till the meat is done and is a nice brown. Heat the sauce with a little stock and serve with the meat. Barbeque sauce Preparation time: 30 minutes Makes 200ml Recipe Ingredients: 2 tbs Oil 6 flakes Garlic 200 ml Tomato puree 200 ml Meat Stock 1 tbs Sugar 15 ml Vinegar 50 ml Worcestershire sauce ½ tsp Salt Pepper 1 tsp Rosemary 1 tsp Recipe Method: In a pan heat oil and saute garlic and chopped onions slightly. Add the remaining ingredients and allow the mixture to thicken slightly. Simmer for five minutes. Creamy mash Potatoes Preparation time: 30 minutes Serves 4 Recipe Ingredients: 3 no Potatoes 1 tsp Salt 1 tsp Pepper 100 ml Cream 50 g Butter Recipe Method: Put potatoes into cold water and place on a stove. Bring to a boil and cook till potatoes are done. Peel and mash the potatoes well. Place the mashed potatoes in a pan with the remaining ingredients. Cook till the mixture simmers. Whisk it a bit and add more cream or butter if required.
Banana bread is best served warm from the oven, cut in thick slices and spread with butter. The addition of Walnuts gives this cake a lovely texture but you can substitute any nuts you prefer-pistachios or hazelnuts also work well.
