Bean and Pesto Salad

A red cabbage, white bean, sunflower seed and cilantro pesto salad with spring onions and capers. Lots of color and health on your plate!

Preparation time: 30mins
Cooking time:  20mins                                                                         
Serves:  4
Sunflower and cilantro pesto
Recipe Ingredients:
½  cup sunflower seeds
4 cups coriander, heavy stems removed
6 Tbs. extra virgin olive oil
2 Tbs. fresh lemon juice
2 cloves garlic, peeled
CANNELLINI SALAD
400g boiled white beans
3 cups shredded red cabbage
2/3 cup thinly sliced green onions
1 Tbs. chopped capers
Recipe Method:
To make the Pesto, toast sunflower seeds in a dry skillet for 3 minutes, or until lightly browned. Put in food processor. Add greens, oil, lemon juice, and garlic, and process until smooth. Season with salt and pepper to taste. To make the salad, combine all ingredients in large bowl. Add 2 to 3 Tbs. Arugula Pesto, and toss to coat. Let stand 15 to 30 minutes to allow flavors to meld. Serve at room temperature.
