These pancakes are quite good. You will be surprised by how well they turn out!
Recipe Ingredients: Pancakes: 5 cups soymilk/ milk 1 cup unsweetened applesauce 2 eggs 1 teaspoon vanilla extract 1 tablespoons rapeseed or canola oil 1 cup buckwheat flour (kuttu) 2 cup sorghum flour (Jowar) 1 teaspoons baking powder 1 teaspoon ground cinnamon Sauce: 3 tablespoons orange juice 2 cups blueberries 2 tablespoons arrowroot 1⁄8 cup fruit sweetener 4 teaspoon ground cinnamon Recipe Method: In a large mixing bowl, combine the milk, applesauce, eggs, vanilla, oil, beating well. Set aside. In a smaller bowl, combine the flours, baking powder, and cinnamon. Add to the liquid ingredients and stir well. Heat a skillet over medium heat and cook each pancake until done. Add more milk, or a small amount of water if you prefer a thinner pancake. To make the sauce: Combine the orange juice, cinnamon, blueberries, arrowroot and Fruit sweetner in a small saucepan. Bring to a boil. Lower the heat and simmer for 5 to 6 minutes, or until thick. Pour the blueberry sauce over the pancakes. Serve warm.
