Recipe ingredients:
250g basic pizza dough
200g mushrooms
6 medium tomatoes
8-10 fresh basil leaves
175g mozzarella cheese (grated)
2tsp fresh grated parmesan cheese
Salt to taste
Pepper to taste
Olive oil for brushing
Recipe Method:
Peel, deseed and chop the tomatoes.
Preheat the oven to 180 degree C. Punch the dough and knead it lightly. Divide the dough into 4 balls. Roll each ball out into a flat circle about 5mm thick. Combine all the ingredients in a bowl. Mix well.
Divide the filling between the 4 circles placing it on half of each circle. Fold the other half of the circle to cover the circle over. Cover the edges and seal well.
Place the calzones on lightly oiled baking sheet. Brush the tops lightly with oil. Bake in a preheated oven for 15-20 minutes until tops are golden and the dough is puffed.
