Cheesy Pea Crostini

An Italian starter that never fails to impress

Preparation time: 15 mins. 
Cooking time: 15 mins.
Serves: 4
 
Recipe Ingredients :

8 slices white bread (sides cut)
150g Frozen peas, thawed
2tbsp grated processed cheese
2tbsp grated mozzarella cheese
1tbsp cream
Mint leaves for garnish
Chill flakes a pinch (optional)
Salt to taste
 
Recipe Method: 
 
Blitz the peas, cream, cheese in a food processor. Don’t make it too smooth- a little texture is nice. Stir through the chilli flakes and season well.
Cut the bread slices into four squares. Drizzle with olive oil. Toast the bread slices on both sides until golden. Spoon a generous dollop of the pea mixture onto each crostini.
