Chicken, green lentil & sweet potato curry

If you would like to make this a vegetarian course, leave out the chicken and add more vegetables or tofu. The secret to making a good curry is to check that your spices are fresh and to cook them until they are aromatic and have lost their ‘raw’ taste.

Preparation time: 20 minutes
Cooking time: 40 minutes
Serves: 4

Recipe Ingredients:
vegetable oil
1 onion, chopped
4 cloves garlic, chopped
4 cm (1½ in) piece fresh ginger,
peeled, chopped
1 cup (6½ oz) green lentils
300 g (10 oz) orange sweet potato,
chopped
1 potato, chopped
500 g (1 lb) chicken thigh fillets, halved
½ tsp ground turmeric
1 tsp ground cumin
1 tsp ground coriander
1 tsp garam masala
½ tsp ground chilli, or to taste
2 tomatoes, chopped
3 large fresh green chillies,
seeded, chopped
1 tsp brown sugar
juice of 1 lime
2 tbsp chopped fresh dill
¼ cup fresh mint leaves
¼ cup fresh coriander (cilantro) leaves

Recipe Method:
Heat 1 tablespoon oil in a large saucepan and cook onion, garlic and
ginger over low heat until soft. Add lentils, sweet potato and potato and
3 cups (24 fl oz) water and simmer over low heat for 20 minutes or until
lentils and potatoes are almost soft.
Meanwhile, heat 1 tablespoon oil in a frying pan and cook chicken in
batches over medium heat until browned. Remove from pan, then add
turmeric, cumin, ground coriander, garam masala and ground chilli and
stir over heat until aromatic, adding a little more oil if necessary. Add
tomatoes, green chillies and ½ cup (4 fl oz) water and cook until tomatoes
are thick and pulpy. Stir into lentil mixture, add chicken and sugar, then
cover and cook over low heat for about 10 minutes or until chicken is
cooked.
Stir in lime juice and herbs and season with salt. Serve with Steamed
Ginger Rice.
