Chicken pesto layered salad

Pesto adds on to the flavor of chicken in this simple salad

Preparation time: 15minutes
Serves:1
Recipe Ingredients:
60g rocket leaves
½ green pepper
2 spring onions
150 g cooked chicken breast
1 tbsp pesto
1 tbsp olive oil
Salt & pepper to taste
Recipe Method:
Tip rocket leaves into a bowl, top with ½ deseeded and diced green pepper, 2 sliced spring onions and 1 shredded cooked chicken breast. Mix 1 tbsp pesto with 1 tbsp olive oil, then drizzle over the salad and season.
