Chilean Corn Chowder

Try this corn chowder that can be spiced to your taste with cayenne.

Preparation time: 20 minutes
Cooking time: 50 minutes
Serves: 8

Recipe Ingredients:
4 cup  vegetable broth
1 rib celery with leaves, chopped
2 cloves garlic, minced
1 bay leaf
1 whole thyme spring, plus 2 Tbs. chopped fresh thyme, divided
¼ cup olive oil
1 medium onion, peeled and diced
¼ cup all-purpose flour
4 cups potatoes, diced
4 cups corn kernels
 3 chicken cutlets, chopped
2 cups tomatoes, peeled, seeded, and diced
¼ cup coarsely chopped coriander leaves
2 Tbs. lime juice, plus lime wedges for garnish, optional
Cayenne pepper to taste
Recipe Method:
Bring broth, celery, garlic, bay leaf, and thyme spring to a boil in large pot. Cover, reduce heat to low; simmer 10 minutes. Transfer to large bowl; set aside.
 Heat oil in the same pot over low heat. Sauté onions for 6 to 8 minutes, until translucent. Gradually add flour; cook, stirring constantly, 5 minutes until smooth and beginning to dry. Gradually add broth; blend with flour.
 Stir in potatoes and chopped thyme. Raise heat to medium- low; simmer 15 to 20 minutes, until potatoes are tender, stirring occasionally.
Add corn and chicken cutlet, reduce heat to low, and cook 7 to 10 minutes more, stirring occasionally. Stir in tomatoes, cilantro, and lime juice. Season with cayenne. Serve with lime wedges, if using.

Orzo is a pasta in the form of small rice like grains which will go well with these meat balls. Try cooking it in stock instead of plain water to add more flavor.
