Dense chocolate cupcake with a molten chocolate centre.
Preparation time: 20 minutes Cooking time: 8 minutes Serves: 6 Recipe Ingredients:
75 g Butter
100 g Dark chocolate
2 no Eggs extra large
1 no Egg yolk
3 tbs Sugar
3 tbs Flour
2 tsp Cocoa powder
¼ tsp Salt
¼ tsp baking powder
50 g Icing sugar
Pre heat the oven to 180* C.
Melt butter and chocolate together over a gentle flame.
Whisk eggs and sugar lightly till the sugar has dissolved. Pour melted chocolate mixture into the egg mix and stir well.
Sieve flour, cocoa powder and baking powder together. Fold this into the egg batter quickly. Do not over fold as this will make the cake heavy.
Pour the batter into buttered individual ramekin molds.
Bake in the oven for 8 minutes.
Remove from the oven. Allow to stand in the mold for 2-3 minutes before serving.
Plating :Dust icing sugar through a sieve on the top and serve immediately either in the ramekins or turn out onto plates.
