Make 1 loaf (8 slices)
Recipe Ingredients :
Self-raising flour 130g
Cornmeal 120g
Sweet corn kernels 200g blanched, or use tinned
Baking powder 1 tsp
Golden caster sugar 2 tsp
Whole milk 240ml
Butter 170g plus extra for the tin
Egg 1, beaten
Streaky bacon 6 rashers fried until crisp and cut into strips.
Recipe Method :
Heat the oven to 190c/fat170c/gas5.Sift the flour into a bowl. Add the cornmeal, sweet corn, baking powder and sugar.
Put the milk and butter into a pan and melt oven a very low heat. Mix the buttery milk into the flour mixture with a beaten egg until it is well combined. Add half of the bacon strips and season with salt and pepper. Butter a 900g loaf tin, pour the mixture in and sprinkle oven the rest of the bacon.
Bake for 40 minutes, or until a skewer comes out clean. Leave to cool in its tin. Serve slightly warm with butter, or with scrambled eggs and smoked salmon.
