Cos Salad with Mustard Chicken & Soft-Boiled Eggs

This is an ideal salad to serve on a large platter and place in the centre of the table.

Preparation time: 20 minutes Cooking time: 20minutes Serves: 4 Recipe Ingredients: 4 large chicken thigh fillets, trimmed of fat 4 slices prosciutto (or ham) Olive oil 6 eggs 1 cos (romaine) lettuce, outer leaves removed 100 g (31⁄2 oz) cherry tomatoes, halved 6 green (spring) onions (scallions), chopped Sea salt MUSTARD DRESSING 2 tsp gluten-free seeded mustard 1 tbsp red wine vinegar 2 tbsp extra virgin olive oil 1 tbsp chopped fresh chives Recipe Method: To make Mustard Dressing, combine all ingredients and season to taste. Wrap chicken fillets in prosciutto and brush with oil. Cook in a non-stick frying pan over high heat until browned on both sides. Remove and place on an oven tray and roast at 200°C (400°F) for 10−15 minutes, depending on thickness. Remove from oven and cool to room temperature, then slice on the diagonal. Bring water to the boil in a saucepan, carefully add eggs and cook, simmering gently for 5 minutes. Remove eggs and plunge into cold water for 5 minutes. Carefully peel eggs and slice in half. Remove leaves from lettuce and place on a large platter. Pile cherry tomatoes in the centre of plate, place sliced chicken on top, then drizzle chicken and lettuce with Mustard Dressing. Place eggs around chicken and sprinkle with green onions and sea salt.
