Dhaba Dal Tadka

Restaurant Style Yellow Dal Tadka.

Preparation Time: 20 minutes
Cooking Time: 30 minutes
Serves: 4
Ingredients:
½ cup Split pigeon pea (toor dal/arhar dal), soaked
½ cup Split Red Lentil (Malka Masoor Dal), soaked
½ tsp Turmeric Powder
2tbsp Ghee
1tsp Cumin seeds
1/8 tsp Asafoetida
2 Medium Onions, chopped
1tbsp chopped Garlic
½ tbsp. Ginger chopped
Salt to taste
2 Large Tomatoes, chopped
1tsp Red chilli powder
2 whole red chilies, broken
¼ tsp Cumin powder
¼ tsp Garam masala powder
1tbsp Lemon Juice
Fresh coriander leaves chopped to garnish
Method:
Drain the soaked Dals and cook with 3 cups water, turmeric and salt to taste till cooked but not mushy.
Heat 1tbsp ghee in a non-stick pan and add the asafoetida and ½ tsp cumin seeds.
As the Cumin seeds splutter, add half the garlic and ginger and sauté on medium heat till the garlic turns pink.
 Add onions and a pinch of salt and sauté till the onions turn golden brown.
Add red chilli powder, turmeric powder, cumin powder and garam masala powder and mix well. Add tomatoes and sauté till they turn pulpy.
Cook for a minute and add the cooked grams and salt. Mix well.
Add water if required and bring to a boil. Add lemon juice and remove from heat.
For the 2nd tempering, heat the remaining ghee and add the cumin seeds.
As the cumin seeds splutter, add the remaining garlic and saute till lightly golden. Add the red chilies and as the chilies turn fragrant remove from fire.
Transfer the dal into a serving bowl, add the 2nd tempering on top and garnish with coriander leaves.
Serve hot.
