Gulab Mewe Ki Chikki

Gulab Mewe ki Chikki.-

-INGREDIENTS

¾ cup sugar, ¾ cup mixed nuts - cashewnuts, almonds and pistachios, ¼ cup dried rose petals


-METHOD

1. Cut the nuts into half carefully to get even pieces. Microwave these for 1½ minutes. Cool.
2. Take a non stick flat pan, add sugar and 2 tbsp of water. Cook on slow heat for 4-5 minutes till the water evaporates.
3. Continue stirring on low heat for 2-3 minutes till the sugar starts to melt.
4. Once it starts to melt, it barely takes a minute to melt completely. (Do not discolour the sugar as it cooks very fast). Remove from heat.
5. Quickly add the nuts and rose petals into the melted sugar and mix quickly. Grease the kitchen platform with oil and pour the chikki mixture on it. Lightly roll out with a rolling pin to get a thin chikki. If you like square pieces make light cuts
with a knife while it is still warm. Cool completely and break into pieces.

TIP: Fresh rose petals can be dried in a microwave. Wash 1 cup fresh petals of desi gulab and pat dry. Keep aside to dry for 1-2 hours on a paper napkin. Spread a paper napkin on the turn table. Spread rose petals on it. Microwave for 2 minutes. Mix and microwave for 1-2 minutes more. Remove from microwave and keep aside for 5-10 minutes to dry completely.
