300g mozzarella cheese
1 cup Flour seasoned with salt and pepper
1cup plain bread crumbs (dried)
Cut the mozzarella into 1” slices. Further cut the slices into 1” fingers. Pat off the extra moisture.
Lightly whisk the eggs.
Press the cheese fingers in the seasoned flour to coat well. Dip them in the egg and then the breadcrumbs. Dip them once more in the egg and then the breadcrumbs.
Heat the oil and deep fry the fingers in medium hot oil to a golden brown.
If you would like to make this a vegetarian course, leave out the chicken and add more vegetables or tofu. The secret to making a good curry is to check that your spices are fresh and to cook them until they are aromatic and have lost their ‘raw’ taste.
