Recipe name: Gajari Malpua


carrot gajar- 2 cup shredded
ghee-500 gm
milk 6 cup thodi gadi
refined flour( maida) -2 cup
suji- 4 tsp
sugar-2 cup
baking sda -1/2 tsp
cardamom powder- 1 tsp
fennel seads (saunf) - 1 tsp
Black Peeper whole-1tsp
safforn (kesar) -1 tsp

Mix 2 cup sugar & 2 cup water in a pan.Boil it until a single thread consistency  is obtained. make a syrup.
Add cardamom powder & mix well.
Boil the milk till it reduces to 1/2 its quantity.
 Roast the rava till light brown. .

In a large mixing bowl, Add the milk ,Flour and all ingredients, shredded carrots, roasted rava,
baking powder,black peeper & funnel,small quantity of water & ghee together to form a smooth batter.

Heat enough ghee in a deep frying pan to cook the malpuas.
Pour the batter into the oil to form circles about 4" in diameter.
Cook till golden brown.
Remove from the oil and put directly into the sugar syrup
Remove after 2-3 minutes and drain on a wire rack.
Now to serve Gajri  malpuas garnish with safforn
