Chicken marinated in ginger juice, pan seared, served with a honey spice sauce
400 gm Chicken (leg pieces)
3 tbsp Ginger juice
To taste Salt
For frying Refined Oil
3 nos. Onions (finely sliced)
1 tsp Cumin seeds (roasted)
1 tsp Coriander seeds (roasted)
8-10 nos. Madras onions (peeled)
1 nos. Onion (finely diced)
1 tbsp Ginger paste
4 tbsp Tomato puree
½ tsp Black Pepper powder
3 tsp Honey
2 tsp Cardamom powder Recipe Method:
Marinate chicken in ginger juice and salt and keep aside. Heat oil and deep fry the onions till golden brown. Remove, cool and grind to a smooth paste. Combine cumin seeds and coriander seeds and grind to a fine powder. Heat 1 tbsp oil in a frying pan and saute the madras onions. Keep aside. In the same frying pan, heat 2 tbsp oil, add cinnamon stick and when it crackles, mix in diced onion and ginger paste and saute till onion is translucent. Mix in tomato puree, brown onion paste, prepared cumin-coriander powder, pepper powder and cook for 5-7 minutes. Add salt and � cup water and simmer for 2-3 minutes. Mix in honey and cardamom powder, simmer for 1 more minute and remove from heat. Heat 1 tbsp oil in another pan and pan-sear the marinated chicken. Moisten with marination juices. Serve in hot in gravy.
