Grilled Aubergine Parcels

Recipe Ingredients: Long aubergines 2 Firm red tomatoes 2 Mozzarella cheese 250g Dry Oregano to sprinkle Salt to taste Freshly ground pepper Olive oil/ butter 50g Tomato paste 1tbsp Finely chopped Walnuts 2tbsp Lemon juice 15ml Fruit vinegar 5ml Recipe Method: Remove the stalks from the aubergines. Cut the aubergines lengthwise into thin slices. You need to get 16 slices in all discarding the side slices. Blanch the slices in boiling water to which salt has been added for 1minute. Drain the slices and dry them on kitchen towel. Cut the tomatoes into 16 slices in all discarding the top and bottom slics. Cut the mozrella into 8 slices. To assemble, place one slice of aubergine on the other to resemble a + sign. Place one slice of tomato on the centre. Season with salt, pepper and oregano. Place a slice a slice of mozzarella on it. Season again and top with another slice of tomato. Fold the ends of the aubergines around the filling to make a neat parcel. Refrigerate the parcels for half an hour. Melt the butter and add the chopped walnuts and toast lightly. Sprinkle some oregano. Remove from heat. Add the vinegar, tomato paste and lemon juice and season. Brush the parcels with a little oil and grill for 5 minutes on each side. Serve hot with the dressing.
