Orzo is a pasta in the form of small rice like grains which will go well with these meat balls. Try cooking it in stock instead of plain water to add more flavor.

Serves: 4
Recipe Ingredients :
Pork mince 500g
Red onion1, half grated, half sliced
Lemon 1, zested and juice
Garlic 1 clove, crushed
Parsley a small bunch, chopped
Vegetable oil to fry
Orzo 200g
Rocket leaves 50g
Natural yoghurt 150ml
Salt to taste
Recipe Method:
Put the pork mince, grated onion, ½ the lemon zest, ½ the garlic and ¾ of the parsley in a bowl with plenty of seasoning. Mix really well (hands are best for this) then form into little meatballs.
Fry the meatballs in a little oil, turning for about 10-12 minutes until completely cooked
Cook the orzo until just tender then drain and rinse under cold water. Drain really well then add to the red onion with 1 tbsp olive oil and the rocket. Toss everything together. Mix the yoghurt with the rest of the parsley and garlic. Serve the meatballs with the orzo salad and herbed yoghurt.
