Indian Style Hummus

This hummus flavored with Indian spices makes for a pleasant change.

Preparation time:
Cooking time: 20 mins
Serves: 6
 
Recipe Ingredients :

olive oil
Onions 1½ medium, finely sliced
Garlic 2 cloves, crushed
Ground cumin 2 tsp
Ground coriander ½ tsp
Boiled Chickpeas 400g
Lemon juice 1-2 tsp
Tomato ½, roughly chopped
 
Recipe Method:
 
Heat 1½ tbsp oil in a large non-stick frying pan and fry to onion for 8-10 minutes until softened and browned. Add the garlic and cumin and cook for a minute.
Scoop out to tbsp of the onion mixture put into a bowl then return the pan to the heat. At the ground coriander and cook for 2 minutes more. Add 2 tbsp chickpeas to the bowl the reserved onion and put the rest in a food processor.
Add the onion from the pan to the food processor, pour over 100ml water and blitz until as smooth as possible. Season well, add lemon juice and blitz again. Spoon into a serving dish. Toss the reserved chickpeas and onion with a tomato. Spoon on top of the hummus.
