Italian Cocktail Crostini

Contrasting flavors on a stick make an ideal party starter

Preparation time: 20 minutes
Serves: 4
Recipe ingredients:
4 cheese cubes
1 tomato, deseeded and cut into dices
4 thick slices of garlic bread
16 black olives
8 cherry grapes
a few lettuce leaves
8 glazed cherries
2tbsp olive oil
cocktail sticks
Recipe method:
Cut the cheese cubes into 4 equal pieces. Halve the olives, cherry grapes and glazed cherries.
Cut the garlic bread into 1” dices and grill till nicely browned on both sides. 
Begin with half a glazed cherry, olive, Cheese cube, cherry grape, a folded piece of lettuce strip on the cocktail stick and lastly finish with the bread. Drizzle with a little extra virgin olive oil and serve.

If you would like to make this a vegetarian course, leave out the chicken and add more vegetables or tofu. The secret to making a good curry is to check that your spices are fresh and to cook them until they are aromatic and have lost their ‘raw’ taste.
