Kacchi Haldi ki Subji

Raw Turmeric Cooked with curds and spices- a Rajasthani Delicacy.

Preparation Time: 50 minutes
Cooking time: 40 minutes
Serves: 4-5
Ingredients:
400g Raw Turmeric
3 Green Chilies
3tsp Kashmiri Red Chili powder
3tsp Dried Coriander powder
2tsp Fennel powder
Salt to taste
Asafetida a pinch
1tsp Cumin seeds
2 cups Curd
¾ cup Desi Ghee
 
Method:
Wash the turmeric rhizomes thoroughly & pat dry.
Peel & grate the Turmeric.
Wash & chop the gren chillies.
Mix together the curd, green chilies,red chilli powder, dry coriander seeds powder, aniseed powder, salt and the grated Turmeric. Allow the turmeric to marinade in the curd mixture for half an hour.
Heat ghee in a pan. Add Asafetida and then the cumin seeds & allow to splutter. Add the haldi – curd mixture to ghee & cook for half an hour over low flame till the ghee separates on the surface .
Serve with Bajra roti, Gur, white butter or more ghee on the side.
