Khatai Lamb Curry

A dry mango powder flavored lamb curry served with fried onions.

Preparation time: 20 minutes
Cooking time: 40 minutes
Serves: 4
Recipe Ingredients:
500g boneless lamb
4 medium onions
1tsp minced ginger
1tsp minced garlic
1tsp finely chopped green chilies
1tsp red chili powder
2tsp dry mango powder (amchoor) 1tsp black pepper powder
4tbsp refined oil
Salt to taste
Recipe Method:
Finely slice 1 onion and finely chop 3 onions.
Heat the oil in a pan. Add the sliced onions and fry till lightly golden . Remove and set aside.
 In the same pan, add the chopped onions and sauté for 5-6 minutes or till golden brown. Add the ginger, garlic, turmeric powder, red chili powder, black pepper powder, salt, 2tbsp water and sauté for 30 seconds.
Add the lamb pieces to the pan and fry for 7-8 minutes till the lamb is lightly browned. Add 300ml water and cover and cook till the lamb is tender.
Add the amchoor powder, chopped green chilies and saute for 2-3 minutes.
Serve hot topped with fried onion. Goes best with jeera rice or rotis.
