Mushroom Cheese Tomato Omelette

A Fluffy Omelette stuffed with Mushrooms, Tomatoes and Cheese.

Preparation Time: 10 minutes
Cooking Time: 10-12 minutes
Serves: 1
2 Eggs
¼ cup chopped Tomatoes
3 button Mushoom, sliced
¼ cup grated Cheddar Cheese
2tbsp Milk
1tbsp Butter
Salt to taste
Pepper to taste
Separate the egg whites and yolks.
To the egg yolks, add the milk, salt and pepper and beat lightly.
Beat the egg whites till soft peaks are formed.
Fold in 1/3 of the egg white into the egg youlk mixture. Fold in the remaining egg white lightly.
Heat the butter in a pan.
Pour the egg mixture into the pan and spread all over the pan by tilting the pan.
Let cook till the bottom is lightly golden.
Arrange the mushroom slices in the center of the omelette, top with chopped tomatoes and  grated cheese.
Carefully fold over one half of the omelette and cook over low flame to cook the vegetables inside.
 Flip over and cook the other side as well till golden.
Remove on a plate and serve immediately.
