Palak Paneer Mousse

A brand new take on the good old palak paneer.

Recipe Ingredients:
Spinach leaves 500 g
Onion 1 medium
Garlic 5 cloves
Ginger 1" piece
Cottage cheese 250 g
Salt to taste
Pepper corns 1 tsp
Gelatin 2 tsp
Chili flakes 1 tsp

For the sauce:
Tomatoes 3
large Onion 1
medium Garlic 2 cloves
Ginger 1" piece
Salt to taste
Whole Red chilies 4
Cream 2 tbsp
Butter 20 g

Recipe Method: Clean and wash the spinach leaves well. Chop the onions, ginger and garlic. Put the spinach to boil with the chopped vegetables in ½ cup water. Remove and drain out the extra water. Grind the spinach to a fine paste. Season well with salt and pepper. Mash the cottage cheese well till smooth and creamy. Mix in salt and chili flakes. Line the base of a tin mould and press firmly. Soak the gelatin in 3tbsp water for 5 minutes. Heat over a barely simmering pan of water till the gelatin melts. Add the gelatin to the spinach puree and mix well. Pour the mixture over the cottage cheese base and refrigrate for 3-4 hours till it sets firmly. To prepare the sauce, make a cross on one end of the tomatoes and blanch in boiling water for 15 seconds. Remove and refresh in cold water. Peel the tomatoes and chop coarsely. Peel and chop the onions. Scrape the ginger and chop finely. Boil the onions, tomatoes, ginger, garlic and the whole red chilies with 1 cup water till cooked well. Cool and grind to a smooth paste. Put the puree to boil again. Bring to a boil and allow to simmer for a minute. Add the cream and simmer for 2-3 minutes. Broil the dry fenugreek leaves in a pan for 20 seconds. Crush finely and add to the sauce. Remove from fire and add the butter. Mix well till the butter melts. Season the sauce with salt and pepper. To serve, carefully remove the spinach mousse from the mould. Cut out into servings and serve with the sauce. Alternatively, you could set the mousse in individual moulds as well.
