Panch phoran Paneer Kebabs with Coconut and Sprout salad and hung curd dip.

Bengal five spice flavored cottage cheese kebabs

Preparation time: 30 minutes
Cooking time: 10 minutes
Serves: 4-5
Recipe Ingredients:
300 gm Paneer
To taste Salt
2 tbsp Lemon juice
1 tsp Green Chillies (finely chopped)
2 tsp Panchphoran ( equal quantities of cumin seeds + mustard seeds + nigella seeds + fenugreek seeds + fennel seeds)
1 tbsp flour
1 tbsp Refined Oil
2 tsp Mustard oil
½ tsp         Mustard seeds
150 gm green gram Sprouts
100 gm fresh Coconut (grated)
2 tbsp Mustard sauce
5 tbs Hung Curd
20-25 Curry leaves
Recipe Method:
Press the paneer to squeeze out any extra moisture.Mash the paneer till soft like a dough. Mix the paneer with  1 tbsp lemon juice and chilies.
Heat 1 tbsp oil, add panchphoran. When spices crackle, remove and cool. Grind to a coarse powder and mix into paneer mixture with salt.
Shape the mixture into kebabs and roll in maida. Grease the grill and grill the kebabs.
For the salad, combine sprouts and coconut in a bowl. Heat ½ tsp mustard oil. Fry the curry leaves and remove. In the same pan, heat 1 tbsp mustard oil, add mustard seeds and 4-5 curry leaves. When mustard crackles, pour tempering over sprouts. Mix in 1 tbsp lemon juice and salt and toss well.
For the dip, mix mustard sauce with hung curd and ½  tbsp. Add salt to taste.
To serve, make a bed of the salad, place kebab on top and top with a teaspoon of the dip. Garnish with a fried curry leave to serve.
