Cottage Cheese cooked with Onion, Tomatoes and Peppers.
Preparation Time: 20 Minutes Cooking Time: 15 Minutes Serves: 4 Ingredients:
½ red bell pepper
½ yellow bell pepper
1 medium onion
2 medium tomatoes
3 tbsp of tomato puree
1 tsp ginger-garlic paste
1 tsp cumin seeds
salt to taste
¼ tsp turmeric
2 tsp Kashmiri chilli powder
1 tbsp coriander powder
½ tsp garam masala powder
1 tsp kasuri methi
3 tbsp vegetable oil
1 tsp lemon juice
Coriander leaves - for garnish Method:
Cut the onion into slices. Cut the tomatoes into half and then into slices.
Cut the peppers into ½ “ thick batons.
Cut the Paneer into 2-3 inch long batons.
Heat oil in a pan and add cumin seeds. Once they start to sizzle, add onions and ginger-garlic paste. Saute on medium-low heat for few minutes.
Add the peppers and sauté for a few minutes till the peppers anre slightly tender but still hold their crunch.
Add tomatoes, tomato puree, salt and turmeric, chilli powder and coriander powder.
Mix well. Add ½ cup of water and mix well.
Add in the garam masala and the paneer batons; toss lightly not to break the paneer batons.
Cover and cook on low for another minute stirring once or twice in the middle.
Cook till the masala coats the vegetables and paneer.
Rub the kasuri methi between your palms and sprinkle over the paneer.
Turn off the heat. Add lemon juice and garnish with coriander leaves.
Serve with rice or roti.
