Raw Mango Chimichurri Bruschetta

Chimichurri is an Argentinean sauce made of parsley, cilantro, garlic, vinegar, and oil. Add the Indian zing with raw mango cubes. Serve it in canapés, in tortillas or even with toasted ciabatta.

Preparation time:  30mins
Serves: 6

Recipe Ingredients:
2 Tbs. lemon juice
2 Tbs. red wine vinegar
3 cloves garlic, minced (1 Tbs.)
¾ tsp. salt
½ tsp. red  pepper flakes
¼ tsp. dried oregano
¼ tsp. freshly ground black pepper
¼ cup olive oil
¼ cup chopped fresh parsley
2 medium sized raw mangoes, pitted, and cubed
6 ½ -inch-thick slices whole-grain or ciabatta bread, toasted


Method 
Combine lemon juice, red wine vinegar, garlic, salt, red pepper flakes, oregano, and black pepper in small bowl. Whisk in olive oil, them stir in cilantro and parsley. Fold in mangoes.  Spoon mango mixture onto the toasted slices, and serve.
