Seared tuna with panzanella & caper dressing

Panzanella is a traditional Italian-style bread salad, which goes well with many dishes including beef and lamb.

Preparation time: 1 hour
Cooking time: 10 minutes
Serves: 4
Recipe Ingredients:
4 X 100 g (3½ oz) thin tuna fillets
olive oil
fresh baby basil leaves, lemon wedges and
Leafy Green Salad (page 176), to serve
CAPER DRESSING
2 tsp baby capers
¼ preserved lemon, skin only,
finely chopped
1 eschallot (French shallot), finely chopped
1 tbsp lemon juice
2 tbsp extra virgin olive oil
PANZANELLA
2 tomatoes, chopped into 1 cm
(½ in) pieces
3 slices Yeast-free Hi-fibre Bread
(page 146), crusts removed, chopped into
1 cm (½ in) pieces
½ red capsicum (pepper), chopped into
1 cm (½ in) pieces
½ yellow capsicum (pepper), chopped into
1 cm (½ in) pieces
¼ cup (1½ oz) baby black olives
¼ cup firmly packed torn fresh basil leaves

Recipe Method:
To make Caper Dressing, combine all ingredients, season to taste and
stand for 1 hour for flavours to develop.
To make Panzanella, combine all ingredients, season to taste and stand
for 1 hour for flavours to develop and for bread to soften and soak up the
tomato juices.
Brush tuna with oil on one side and cook on that side over high heat in a
non-stick frying pan, pressing down with a spatula, until well browned.
Do not cook the other side.
Place tuna, seared-side up, on a bed of Panzanella. Drizzle with Caper
Dressing, sprinkle with basil leaves and serve with lemon wedges and salsa.
