Shami Kebab

The famous kebabs from Lucknow.

Preparation time:20 mins.
Cooking time: 40 mins.
Serves: 4
Recipe Ingredients:
500 gms Mutton keema
Half a teaspoon of Red Chilli Powder
¼th teaspoon Cumin seeds
¼th teaspoon Black Pepper
¼th tablespoon big Cardamom seeds
10 Green cardamoms Pods
½ a tablespoon clove
2 tablespoon Chana Dal
½ tablespoon of sliced garlic
½ tablespoon of sliced ginger
½ cup oil
Salt to taste
For the Stuffing
1 large finely chopped onions
1tsp finely chopped green chilies
1tbsp finely chopped coriander leaves
Recipe Method:
Mix the keema with all other ingredients and boil for 30 minutes.
Grind this mixture to a paste once it is cool.
Make small lemon-sized balls of the mixture.
Stuff the balls with half a tablespoon each of the cut onions, coriander and green chilies and shape into patties.
Heat a tawa or gridle on medium heat. Add about 1tbsp oil to the tawa.
Shallow fry the patties on low to medium heat till crisp adding a little oil at a time to help crisp the patties better. Flip and crisp on the other side as well.
Serve hot with onion rings, green chutney and lemon wedge.
