Steamed cuttlefish & prawns with vietnamese-style coleslaw

If you find cuttle fish messy or can’t find it at all, feel free to use squid instead. Frozen squid rings (kalamari) is easily available these days.

Preparation time: 20 minutes
Cooking time: 20 minutes
Serves: 4

Recipe Ingredients:
2 X 500 g (1 lb) cuttlefish, cleaned
12 medium green prawns (shrimp),
peeled and deveined, tails intact
1 carrot, cut into julienne
300 g (10 oz) Chinese cabbage, finely
shredded
3 green (spring) onions (scallions),
trimmed and sliced on the diagonal
50 g (1¾ oz) snowpea (mangetout)
sprouts, trimmed
12 cherry tomatoes, halved
¼ cup firmly packed fresh coriander
(cilantro) leaves
35 g (1¼ oz) toasted chopped peanuts
or cashews
SWEET CHILLI SAUCE
2 tbsp rice vinegar
1 tbsp caster (superfine) sugar
2 large fresh red chillies, seeded, chopped
Recipe Method:
To make Sweet Chilli Sauce, combine all ingredients in a saucepan, add
¼ cup (2 fl oz) water and simmer over low heat for about 10 minutes or
until syrupy. Cool.
Slice cuttlefish into 2 mm (1/16 in) thick slices. Cook cuttlefish and prawns
in batches in the top of a double steamer over a pan of simmering water
for about 1 minute for the cuttlefish and 1–2 minutes for the prawns, or
until just cooked.
Place carrot in a bowl, cover with boiling water, then drain and rinse
under cold water.
Combine cuttlefish, prawns and carrot with remaining ingredients, toss
with sweet chilli sauce and serve immediately.
