Sweet and Sour Onions

A continental side dish of whole onions.

Recipe Ingredients: Baby onions 500g Vinegar 50ml Sugar 50g Tomato puree 50ml Bay leaves 2 Black cardamom 2 Raisins ½ cup Oil 50ml Freshly ground pepper 1tsp Salt to taste Recipe Method: Peel the onions. Heat the olive oil in a pan. Put the onions in the oil. Keeping the flame low, saute the onions for 2 minutes. Add the vinegar, sugar, tomato puree, bay leaves, black cardamom, salt, pepper, raisins and 300ml water. Bring to a boil and simmer gently till the water evaporates. Ensure that all the onions are cooked and most of the water has evaporated. Remove the Bay leaves and the black cardamom.
