Recipe Ingredients: 250g soft tofu 2 eggs 120ml soya milk ( skimmed milk can be used as well) 100g caster sugar 1tsp caster sugar 4tbsp maple syrup 2tbsp brown sugar 100ml water 350g mixed berries 125g plain flour 55g low fat spread 2-3 tbsp cold water
Recipe Method: Preheat the oven to 180 degree centigrade. Lightly grease a 20cm loose bottomed flan tin. Sift the flour into a bowl. Rub in the low fat spread until the mixture resembles breadcrumbs. Mix in the cold water and bind together. Do not knead. Roll out toa 20 cm circle and place in the tin. Prebake in the oven for 10 minutes. Place the tofu, eggs, soya milk , sugar, vanilla extract and maple syrup in a food processor and blend until smooth. Pour into the prebaked base and bake for 25 minutes. Remove from the oven and allow to cool and refrigerate until chilled. Place the berries, water and sugar in a saucepan and bring to a boil. Continue to cook for 5 minutes on slow fire until softened. Allow to cool. Pour the fruit over the refrigerated cheesecake before serving.

Pankaj hosted her first cookery show - "Chef Pankaj ka Zayka" on Star Plus during Sep-Oct 2011 where she showcased her passion for cooking. The success of this daily show added another flavor to her sweet success.
