Add a little cheese to the pastry to make it really flaky and crisp and gives extra flavor.

Serves: 4
Recipe Ingredients :

Tomatoes 12 small, halved
Olive oil
Dijon mustard 1 tsp.
Mature cheddar 50g
Egg 1, beaten
Thyme 2-3 springs, leaves picked 
Plain flour 200g
Butter 100g, chilled and diced
Mature cheddar 50g, grated
Cayenne pepper a pinch
Recipe Method:
Heat the oven to 109C/fan 170C/gas 5. Put the tomatoes cut side down in an oiled and seasoned baking tray and cook for 10 minutes. Cool, take of the skins and discard.
To make the pastry put the flour and butter in to a food processor and pulse until the mix resembles bread crumbs. Stir in the cheese and cayenne, season. Remove from the processor and then add water to bring together into a dough. Wrap in cling film and rest in the fridge for 15 minutes.
Roll out the pastry and line a 23cm tart tin. Fill with baking parchment and beans then bake blind for 10 minutes. Take out the paper and cook for another 5-10 minutes. Cool.
Mix the mustard, cheese and egg and spread on the tart. Sit the tomatoes on the top and sprinkle with thyme and seasoning. Bake for 20 minutes serve warm.
